A Taste of Italy - Prosciutto-Wrapped Chicken Stuffed with Grana Padano Cheese

I'm a cheese lover. There I said it. I'm not sure if reincarnation is real, but I think there is a possibility I may have been a mouse in a past life. Recently I was introduced to one of Italy's most popular cheeses at the mind-blowing Food Network South Beach Wine & Food Festival that made me believe this theory even more. Grana Padano, a healthy Italian pleasure, is lactose-free, lower in fat than other cheeses and high in calcium and protein. Nice, huh? And even though it's good for you, it tastes delicious; with a sweet, slightly nutty taste. In case you were wondering, "Grana" stands for the grainy and crumbly texture of the cheese and "Padano" refers to its origin in the Piadura Padana Valley.




This hard cheese has been a part of Italy's proud culinary tradition for over 1000 years (wow, that's a long time) and was created by monks in the Padana Valley. Then, in 1954, the Consortium for the Protection of Grana Padano cheese was founded to protect and promote the brand throughout the world. Right now it is the most widely sold PDO cheese in the world.

Grana Padano is aged from 9 to over 24 months and you can buy it in three distinct ages, depending on what you're looking for. You don't have to travel to Italy to get it either. It can be purchased at leading retailers across the country, including Central Market, Trader Joe's, Kings, Balducci's, Bristol Farms, Lunds & Byerlys, Costco and Eataly, as well as online at dipaloselects.com, murraycheese.com, and igourmet.com. One of the things I love about it is that it is very versatile; you can eat it on its own or you can use it in your favorite recipes. After tasting a delicious dish using Grana Padano at The SoBeWFF prepared by Chefs Fabrizio and Nicola Carro from Quattro Gastronomia Italiana, I decided to try my hand at one myself. So, I am going to bring you a taste of Italy (from my kitchen in Miami) using Grana Padano and I hope you like it. Rocking my Faux Gourmet Tutu Fabulous Apron


Prosciutto-Wrapped Chicken Breasts Stuffed with Grana Padano



Serves 4


Ingredients:
2 zucchinis, thickly sliced
4 tomatoes, quartered
1 large eggplant, cut into chunks
4 tablespoons olive oil
4 skinless, boneless chicken breasts
4 teaspoons red or green pesto sauce
About 12 basil leaves (if you don't have on hand, Badia works just fine)
4 Garlic Cloves, minced
2 ozs Grana Padano cheese, finely grated
8 slices of Prosciutto
Salt and pepper to taste
Shavings of Grana Padano, to serve




1. Preheat the oven to 400 degrees.
2. Put the zucchinis, tomatoes and eggplant chunks into a roasting pan and drizzle with olive oil. Season and toss together to coat.
3. Cut a pocket into each chicken breast and fill each one with a teaspoon of pesto sauce, about 3 basil leaves, 1 garlic clove, and a quarter of the grated Grana Padano Cheese.




4. Wrap each chicken breast with two slices of prosciutto, then arrange them on top of the vegetables. Season, then drizzle with a little more olive oil.



5. Roast for 35-40 minutes, until the vegetables are tender and the chicken is done. (Time may vary depending on the oven). Check that the chicken is thoroughly cooked by piercing the thickest part with a sharp knife- the juices should run clear.




If you're not a poultry fan, you could also use skinless cod loin or sea bass fillets. Spread them with pesto and top with basil leaves and grated Grana Padano before wrapping them in the prosciutto. Reduce the cooking time to 20 minutes. Enjoy!

Villa by Barton G (CLOSED)

If you walk on Ocean Drive and 11th Street, you will usually see a group of people standing in front of the alluring mansion behind the imposing gates. The cameras click to capture the essence of a place known for both tragedy and revival. It is here, in the former home of the late designer Gianni Versace, that I experienced one of my most memorable adventures.



I recently began writing restaurant reviews for SFG Magazine and chose The Villa by Barton G., located at 1116 Ocean Drive, as my feature for the March/April issue. Already a fan of both Barton G. on South Beach and Prelude in the Adrienne Arscht Center, I was ecstatic to be visiting this elegant, spellbinding place and indulging in their impressive cuisine. Having gone through a metamorphosis, the Villa was rebranded in 2010 by restaurateur Barton G. Weiss as an upscale boutique hotel, event space and luxurious restaurant.



Crossing the gates, we were led to some couches outside the mansion, to wait to be taken inside. Just sitting there, admiring the surroundings, was a precursor to the opulence we would find within its walls. The anticipation grew as we entered into the breathtaking courtyard. To the left, was the lavish Dining Room; the place where Versace had his own dining room and is now the Villa's restaurant. Completely covered in pebbled mosaicked walls and marble floors, the lingering impression it provides its guests is one of awe.



Truffled Asparagus Salad
Duck Confit Crepe A L'Orange
From the moment we were seated, service was stellar and seamlessly blended in with the ambiance. We started with a glass of champagne as we looked through the menu. There were several dishes we wanted to try so we began with the Truffled Asparagus Salad and the Duck Confit Crepe A L'Orange. They were both superb. The Truffled Asparagus Salad was made with white and green asparagus and crimson petit lettuce. The seasonal morel mushrooms provided an earthy undertone to the dish, while the savory ricotta flan and shaved truffles balanced the flavors. The Duck Confit Crepe A L'Orange was a colorful palate pleaser, tickling the taste buds with sour ginger, candied kumquat and pistacchio streusel in a playful arrangement of pistachio nuts and compressed pineapple.

Flash Marinated Snapper Ceviche
For the next course, we ordered the Flash Marinated Snapper Ceviche and the Vodka Cured Salmon. The ceviche combined Key White Shrimp and Key Lime with Mango, resulting in citrusy splendor with a jalapeno kick. It was pure harmony for the senses. The cured salmon looked more like a work of art topped with  mustard caviar, dill pearls and golden pumpernickel, than cuisine. It took a few moments of admiration before we put our forks to the test. Delicious!

Maro Grouper
Breaded Crusted Diver Scallop &
Anise Glazed Veal Cheek
As a main course, we tried the Bread Crusted Diver Scallop & Anise Glazed Veal Cheek, and a special of the evening, the Maro Grouper. The Bread Crusted Diver Scallop was mesmerizing, igniting a burst of flavors from both land and sea.  Bathed in a golden raisin caper broth, the tender meat and the delectable toasted oak cake enveloped all the senses. The Maro Grouper sat atop a bed of forbidden rice simmered in burgundy beet reduction. Combining the mild and distinct flavors of the popular fish with the richness of the seared foie gras, it proved that it too should become a regular part of this glorious menu.

Chocolate-Praline Mousseline

A meal like this is not complete without a sweet surrender and that is exactly what we did. We ended the gastronomic part of the evening with two fabulous desserts. The first was the Chocolate-Praline Mousseline, a decadent layered temptation of valrhona ganache, hazelnut mousse and salted caramel. My heart skipped a beat from the moment I saw its beautiful presentation in the delicate tea cup. The Key Lime Fantasy was just as divine, uniting Chantilly and salted graham with sweet lime custard. A perfect ending to a perfect meal.

Before we left this opulent mansion, we got the opportunity to learn more about the Villa and all its splendor; as well as visit some of its impressive rooms. It truly is a magical place that is perfect for an unforgettable ocassion. At the end of the night, your wallet may be significantly lighter but the evening will be a memory never to be forgotten.

Adventures of the Foodaholic's 1 Year Anniversary Celebration at NoVe Kitchen & Bar

I wanted to write this post to give a huge THANK YOU to all our friends and fans who celebrated our One Year Blogaversary Celebration on March 13th at Nove Kitchen and Bar with us. It was an amazing evening full of delicious food artistically created by the talented Chef Hiro Terada, tantalizing cocktails, sweet alcoholic cupcakes by Sweet and Tipsy, and incredible bites prepared with jams and marmalades by The Flavor Fusion Artisanal Foods.

DJ Drew kept the tunes spinning and we had a blast participating in our very own Foodaholic305Shake; a foodie's version of the Harlem Shake.(Check out DJ Drew's site to find out how you can download their app, EOSfm, and stream awesome music all the time)  Tweeting was a must, of course, and prizes included a gift card to NoVe Kitchen and Bar, and two free months of boot camp at Q4 Fitness Miami (gotta work off all the mouthwatering food).
